Ingredients
  • 2 lbs chicken breast
  • 1 medium onion
  • 2 garlic cloves
  • 1 jar of tomato sauce
  • 1 green pepper, cut in strips
  • ½ teaspoon Rosemary
  • ½ teaspoon Fennel
  • 1 Bay leaf
  • ½ teaspoon Basil, maybe more
  • ½ teaspoon Oregano
  • Salt & Pepper to taste
  • 4 oz. can of mushrooms (or equivalent of fresh mushrooms)
  • ¼ cup white wine
Steps
  1. Cook chicken in butter and oil in a saute pan just till done. Set chicken aside.
  2. Saute onion and garlic in pan.
  3. Add tomato sauce, green pepper and spices and stir to combine well.
  4. Add chicken to sauce. Simmer about 30 minutes.
  5. Add mushrooms and white wine and heat through.
  6. Serve over pasta.
