Gluten Free Puff Pastry Recipe (Rough Puff Method)
Ingredients
  • 55 g potato starch
  • 60 g tapioca starch
  • 35 g Mochiko Flour (also known as glutinous rice flour; sticky rice flour; Asian rice flour; sweet rice flour)
  • 40 g sorghum flour (or alternative high protein (no nut) flour
  • 35 g brown rice flour
  • 4 g xanthan gum (= 1 rounded teaspoon) Or sub with guar gum (same amount) or psyllium husk powder (twice the amount)
  • ¼ tsp fine sea salt
  • 50 g cold, cubed butter (to RUB in)
  • 130 g cold, cubed (or finely sliced) butter (to ROLL & FOLD)
  • 120 g very cold water (preferably iced)
