Butternut Squash Stew with Andouille and Quinoa
Ingredients
  • 1 medium white onion , diced
  • 1 large green bell pepper , diced
  • 1 (12 oz.) package of andouille sausage, sliced in half lengthwise, then cut into ½ inch pieces
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • 4 cups low-sodium chicken stock or water
  • 4 cups cubed butternut squash (about 2.5 lbs)
  • 1 cup of quinoa , rinsed if not pre-rinsed kind)
  • sea salt to taste
