Kabocha Squash Simmered (Nimono)
Ingredients
  • ½ kabocha squash/pumpkin (Small kabocha, roughly 1 lb / 450 g )
  • 1 inch ginger (optional)
  • subheading: Katsuo Dashi:
  • 1 ¾ cups water (400 ml)
  • 2 packs katsuobushi (dried bonito flakes) (0.2 oz / 6 g)
  • subheading: Seasonings:
  • 1 Tbsp sugar
  • 2 Tbsp sake
  • 2 tsp soy sauce
  • pinch salt (kosher or sea salt; use half if using table salt)
