Rigatoni With Tomatoes & Vodka Sauce
Ingredients
  • 2 tbsp (¼ stick) butter
  • 1 Small Onion, Chopped
  • 2 Garlic Cloves, Minced
  • 1 tbsp Dried Italian Seasonings, Crumbled
  • 1 16oz Can Italian Plum Tomatoes, Chopped, Juices Reserved
  • 3 oz Sliced Prosciutto or Ham, Chopped
  • ½ cup Vodka
  • ¾ cup Whipping Cream
  • ½ cup grated Parmesan Cheese
  • 8 oz Rigatoni
  • Salt and Pepper to taste
Steps
  1. Melt butter in heavy large skillet over medium high heat.
  2. Add onion, garlic and Italian seasoning and sautee until onion is translucent. About 4 min.
  3. Add tomatoes, reserved juices and prosciutto and simmer 10 minutes stirring occasionally.
  4. Add vodka and simmer 5 minutes
  5. Add cream and ½ cup Parmesan.
  6. Simmer until sauce thickens slightly, about 4 minutes
  7. Add rigatoni and stir until sauce coats pasta.
  8. Season with salt and pepper.
  9. Serve immediately, adding extra parmesan on top.
Notes
  • Combo Groups:
  • - Onion (1 small), Garlic (2 cloves minced), Italian Seasoning (1 tbsp)
  • -Tomatoes (16oz can italian plum), Reserved Tomato Juices, Prosciutto or Ham (3 oz)
  • -Vodka (½ cup)
  • -Cream (¾ cup), Parmesan (½ cup)
  • -Salt/Pepper (to taste. Add at end.)
