Ingredients
  • 3 cups shredded zucchini, dried and packed
  • ½ cup shredded cheddar cheese
  • ¼ cup onion, chopped
  • 3 large eggs
  • ⅓ cup coconut flour
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon xanthan gum
  • note: *Salt to taste AFTER cooking, if you add salt to the mixture itself it will release more moisture and be soggy.
