Plant-Based, Multi-Grain Banana Muffins
Ingredients
  • 1 cup white whole wheat flour (113 grams)
  • ¾ cup oats pulsed into a flour, can also use quick-cooking oats if you don't have a food processor.
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 cup shredded zucchini about 1 small zucchini
  • ⅓ cup avocado oil
  • ½ cup maple syrup or honey
  • 2 large eggs
  • 1 cup plain Greek yogurt 2% fat for best texture, can use 1% or whole fat too
  • 1 teaspoon vanilla extract
  • ¾ cup fresh or frozen blueberries
