Meridith's Red Beans and Rice

Servings: 8 cups

Ingredients
  • 1 roll of sausage
  • 1 can of rotel
  • 1 can of green chillies
  • 1 can of red beans drained
  • 2 cups uncooked rice
  • Cajun seasoning to taste
Steps
  1. Brown sausage until cooked through.
  2. While sausage is cooking cook rice per package instructions.
  3. Add rotel, chillies and drained beans to sausage.
  4. Add rice and stir.
  5. Add desired amount of cajun seasoning
Notes
  • I used Tony Chacheres seasoning and did 2 hefty sprinkles around the pan.
