Lower Fat Vegan Scones
Ingredients
  • 1 can pumpkin
  • 3 c ww flour
  • 2 T baking powder
  • ¼ c sugar
  • Generous pinch of salt
  • 1 c walnuts chopped
  • 1 c cranberries chopped
  • 2 oranges - zest and juice
Steps
  1. Preheat oven to 375.
  2. Line two cookie sheets with parchment paper.
  3. Combine flour, baking powder, salt and sugar. Stir.
  4. Add the chopped walnuts and cranberries with the zest of the two oranges. Stir.
  5. Add the pumpkin and juice of the two oranges.
  6. Stir to combine the majority of the flour.
  7. Knead to combine the remaining flour on a lightly floured surface.
  8. Roll to about ½ inch thick.
  9. Cut using a biscuit cutter.
  10. Bake in preheated oven for 15 minutes or more as needed.
Notes
  • Made this recipe 2/15.
  • Baked at 350 which seemed too low. Baked for 15. Increased temp to 375 for another 3 to 5 minutes. Shut the oven off and let the scones sit in the warm oven.
