  • ⅓ cup ( 65 g) brown sugar
  • 1 tsp vanilla extract
  • 1 ( 20 ml) coffee shot

  • 3 cups ( 630 g) dark cooking chocolate
  • 3 large eggs separated
  • 2 gelatin leaves platinum strength or above (see notes)
  • 1 ¾ cups ( 440 ml) heavy cream cold
  • 1 tsp vanilla extract
  • ¼ cup ( 55 g) caster sugar
