Pineapple & Watermelon Jelly Summer Drink

Ingredients
  • 800 grams fresh watermelon
  • 200 grams fresh pineapple
  • 1 tsp Agar powder
  • 1 tblsp tapioca starch
  • 60 grams maple syrup
  • 2 sprigs pepper mint
  • 400 grams chilled V-milk
  • 100 grams chilled coconut milk
Steps
  1. Remove Watermelon fruit from rind & blend
  2. Pass watermelon mix through sieve & pour watermelon juice into ice cube tray & freeze
  3. Cut fresh pineapple from rind & add to blender + Agar + tapioca starch + 50 grams maple syrup + pepper mint + 300 grams V-milk & blend
  4. Add pineapple mix to saucepan & stir continuously over low to medium heat until mixture thickens
  5. Pour into drink containers & refrigerate until mixture cooled
  6. Cut cooled pineapple mixture into chunks & pour over 100 grams chilled coconut milk + 100 grams V-milk + 10 grams maple syrup
  7. Add frozen watermelon cubes & serve
