Ingredients
  • ½ box pasta
  • 4 eggs
  • 8 oz guanciale/pancetta/bacon
  • 1 cup freshly grated parmigiano reggiano
  • 2 Tbsp evoo
  • S&P
Steps
  1. Heat oil -med
  2. Render pork, keep warm on low
  3. Mix parm/egg/pepper big bowl
  4. Salt water, cook pasta
  5. Drain, add to pork/fat, stir to coat
  6. Dump into egg mix, toss like hell for a min
  7. Add pasta water as needed
