Hollandaise Sauce
Recipe from Mom Halteman
Ingredients
  • 4 egg yolks
  • 1 T lemon juice
  • ½ C butter, melted
  • pinch of cayenne
  • pinch of salt
Steps
  1. Whisk egg yolks and lemon juice till doubled.
  2. Slowly cook over a double boiler, whisking constantly then drizzle in melted butter. Continue to whisk till doubled and thickened.
  3. Remove from head & stir in cayenne and salt.
