Homemade Bagels, a La Peter Reinhart
Peter Reinhart’s bagels have a perfect outer skin and chewy inside, perfect for toasting, and freezing pre-sliced.
Ingredients

  • 2 ¾ teaspoons salt
  • 2 teaspoons malt powder or 1 tablespoon dark or light malt syrup, honey, or brown sugar

  • 2 tablespoons baking soda
  • 1 tablespoon barley syrup or honey
