Spiced Seared Eggplant with Pearl Couscous
Ingredients

  • ⅓ cup extra-virgin olive oil
  • 2 cups cubed eggplant with skin (about 1 small eggplant)
  • 1 medium yellow or white onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 medium tomato, diced, or 1 cup canned diced tomatoes
  • ¼ teaspoon smoked paprika
  • ¼ cup freshly chopped parsley
  • Yogurt, for serving (optional)
