Leek and Potato Soup (Vegan/No Cream)
Ingredients
  • 2 tablespoons olive oil or avocado oil (30 ml)
  • 2 large leeks
  • 4 garlic cloves, sliced
  • 2 pounds white potatoes, peeled and diced (about 1kg)
  • 6 cups vegetable stock (1.4litres)
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 teaspoon salt plus more to taste
  • black pepper to taste
