Cranberry Orange Nut Bread
Make this delicious recipe as a loaf or muffins. Great for a snack or even breakfast!

Servings: 1 loaf or 18 muffins

Ingredients
  • 1 c chopped cranberries
  • ½ c chopped walnuts
  • 1 T zested orange peel
  • 2 c flour
  • 1 c sugar
  • 1 t salt
  • 2 T butter
  • 1 T baking powder
  • 1 egg
  • ¾ c orange juice
Steps
  1. Preheat oven to 350°.
  2. Mix flour, sugar, salt, and baking powder.  Cut in butter.
  3. Stir in juice, egg, and zest to moisten.
  4. Fold in cranberries and nuts.
  5. For loaf, pour batter into greased loaf pan and bake for 55 minutes. Cool for 15 minutes before removing.
  6. For muffins, place paper muffin cups in tin. Fill ⅔ full with batter. Bake for 20 minutes.
