  • 2 tsp. Diamond Crystal kosher salt (0.21 oz / 6g)
  • Neutral oil, for the bowl and baking sheet
  • Cornmeal, for dusting
  • Special Equipment: Instant-read thermometer, stand mixer, 3½-inch round cutter (optional), griddle or large skillet (preferably cast-iron)
