Protein Pancakes

Ingredients
  • 1 egg
  • ½ cup rolled oats
  • ⅓ cup plain yogurt
  • ½ tsp baking powder
  • 1 scoop protein powder
  • ⅓ cup coconut milk
Steps
  1. Mix all ingredients and stir until combined. Heat pan and coat with coconut spray. Drop batter onto pan. Makes 3 to 4 small pancakes.
  2. Top with fresh fruits.
  3. Protein "syrup" - mix 1 scoop (chocolate) protein with 3 tbsp almond milk adding more milk and optional nut butter.
