Chickpea & Vegetable Tagine
Ingredients
  • 1 red onion chopped
  • 1 carrot chopped
  • 1 green bell pepper seeded and chopped

  • ¼ teaspoon ground cinnamon

  • ½ teaspoon smoked paprika
  • 1 ¼ inch turmeric or ¼ teaspoon ground
  • cayenne pepper to taste
  • 2 cups vegetable broth
  • 1 cup green beans in 1-inch pieces
  • 2 cups mushrooms diced
  • 1 ½ cups cooked chickpeas or 1 15.5 oz can
  • 2 tablespoons fresh cilantro or parsley minced
  • 2 teaspoons blended peeled lemon
  • 1 tablespoon raisins or minced dried apricots
