Low Carb Instant Pot Mississippi Pot Roast
Ingredients
  • 3 lb chuck roast
  • 2 tbsp olive oil or vegetable oil
  • salt & pepper to taste
  • 1 packet ranch dressing mix
  • 1 packet dry onion soup mix
  • ½ cup salted butter 1 stick
  • 8 peperoncini peppers
  • 1 cup beef broth
  •  
  • Or
  • 1 cup low sodium beef broth
  • ½ cup pepperoncini juice
  • 1 tablespoon dried chives
  • 1 tablespoon dried onion flakes
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons onion powder
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon dried dill
  • ¼ teaspoon black pepper
  • 1 tablespoon low sodium soy sauce or tamari sauce or coconut aminos
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons avocado oil
  • 5 pound beef chuck roast cut in 2 to 3 pieces to fit inside your instant pot
  • 8 tablespoons unsalted butter
  • 2 tablespoons beef gelatin we used Vital Proteins
  • ½ cup sliced pepperoncini
