Emeril's Light & Crispy Onion Rings
Ingredients
  • 3 cups buttermilk
  • ¾ cup Louisiana hot sauce
  • 2 tbsp Creole Seasoning (cookbook gives recipe below - just mix all ingredients together - but I used store bought)
  • 3 tsp cayenne pepper
  • 2 large sweet onions, such as Viladia, Maui or Walla Walla, sliced crosswise into ½-inch-thick rings
  • Vegetable oil, for deep frying
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp kosher salt, plus more for seasoning
  • subheading: Creole Seasoning (yields ⅔ cup):
  • 2 ½ tbsp paprika
  • 2 tbsp salt
  • 2 tbsp garlic powder
  • 1 tbsp freshly ground black pepper
  • 1 tbsp onion powder
  • 1 tbsp cayenne pepper
  • 1 tbsp dried oregano
  • 1 tbsp dried thyme
