Chicken and Mushroom Casserole
Ingredients
  • 1 pound whole wheat bow-ties or short pasta of choice
  • 1 tablespoon butter unsalted
  • 1 cup diced onion
  • 2 celery stalks diced
  • 2 teaspoons salt divided
  • 2 cloves garlic grated
  • 1 cup sliced mushrooms
  • 2 tablespoons flour
  • 2 cups chicken broth low sodium
  • 3 cups cooked chicken - diced rotisserie works well!
  • 32 ounces plain low fat yogurt
  • 2 cups shredded mozzarella cheese divided
  • 2 tablespoons lemon juice
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon pepper
  • ½ cup panko
  • 1 tablespoon olive oil
