Baked Cod with Garlic and Lemon

Ingredients
  • 4 fresh fish fillets, each weighing around 6 to 8 ounces
  • Two teaspoons of melted unsalted butter
  • squeeze the juice from half of the lemon  thinly slice the remaining half.
  • TWO TTS of extra virgin olive oil
  • three freshly minced garlic cloves
  • One or two handfuls of finely chopped fresh parsley (keep some for garnish)
  • Add more salt and pepper to taste.
