  • ½ tsp. kosher salt, plus more taste
  • 1 ½ lb. large shrimp, peeled and deveined
  • ¼ c. red wine vinegar
  • 2 lb. tomatoes (red and/or yellow), cut into 1-inch chunks
  • 1 small red onion, thinly sliced
  • ¾ c. pitted kalamata olives, thinly sliced
  • 2 tbsp. drained capers, chopped
  • ½ c. fresh basil, chopped
