Sweet after dinner drink or sipping on a hot day
Made in a 6 qt IP
Ingredients
  • 750 mil of handcrafted 80 proof vodka
  • 20 lemons
  • simple syrup
  • five ½ pint mason jars
Steps
  1. With a vegetable peeler remove the lemon skin..yellow part only..scrape off any white with a knifes
  2. Divide the lemon peels into the 5 jars
  3. Fill each jar with the vodka leaving ¾" head space in each
  4. Put your lids and rings on finger tight then back off just a little
  5. Put 1 cup of water into your pot with the trivet
  6. Place 3 jars inside
  7. Close and seal the lid
  8. Set your pot to Manual 30 minutes
  9. Allow for a full NPR
  10. Carefully remove the jars and place on a cooling rack. Process the remaining jars
  11. Let cool overnight
  12. Day two...put 4 cups of filtered water into your pot
  13. close and seal the lid
  14. Set your IP to manual 2 minutest
  15. QR
  16. Add 4 cups of white sugar to the water
  17. Set pot to sauté and stir until all the sugar has dissolved
  18. Let cool
  19. In a large glass pitcher combine the jars of vodka and lemon peels with the simple syrup. Let it sit for a day on the counter
  20. Day three
  21. Strain mixture and bottle it up. Put the bottles in the freezer.
