Ingredients
  • 1.5 to 2 Tablespoons Sriracha: So spicy! Use this to taste. Sriracha uses chili peppers, pickled garlic and distilled vinegar to make a hot sauce with a powerful punch in these spicy peanut butter noodles.
  • 1.5 Tablespoons Low Sodium Soy Sauce: This is a great way to get some saltiness and umami flavor into this sauce with one ingredient. You can use regular soy sauce, but personally we find it to be way too salty.
  • 1 Tablespoon Maple Syrup: This will add more sweetness to the dish while contributing to the sauce's robust flavor profile.
  • 1 Tablespoon Lime Juice: Adding a splash of brightness is usually a great choice for any sauce. Plus, it makes the recipe a little more like vegan Thai peanut noodles.
  • 0.5 to 1 Tablespoon Garlic Powder: You're welcome to use fresh minced garlic if you prefer, but we like our sauce smooth and love the flavor of garlic powder in there.
  • 3 Tablespoons Hot Water
  • 8 Ounces Pasta or Noodles of Choice: We like to use a Bucatini or regular spaghetti noodles for this dish. You could also get some soba noodles or udon noodles if you want actual noodles.
  • 0.5 Cup Green Onions, as Garnish
  • 0.25 Cup Peanuts, as Garnish: You can chop these with a knife or shove them into a zip bag and crush them by hand. You just want them to be in little pieces to add a little texture to your vegan peanut noodles.
