Chickpea & Cauliflower "Rice" Bowl
Ingredients

  • ½ teaspoon Garlic Powder

  • Pinch of Sea Salt
  • Pinch of Brown Sugar

  • 1 medium (5 to 6″ diameter) head Cauliflower
  • 1 ½ tablespoons Olive Oil
  • 4 cloves Garlic, pressed or minced
  • 1 medium (196g) Zucchini, diced
  • 1 small (74g) Green Bell Pepper, diced
  • 1 cup frozen corn,  defrosted
  • 2 teaspoon Chili Powder
  • ½ teaspoon Cayenne Pepper
  • ½ teaspoon Ground Cumin
  • 1 teaspoon Salt
  • ½ tablespoon Lemon Juice
  • 2 Plum Tomatoes, chopped
  • Optional toppings: chopped Cilantro, sliced Avocados
