Crockpot Hamburger Soup

Ingredients
  • 1lb lean ground beef
  •  
  • 1 yellow onion, diced
  •  
  • 2 russet potatoes, peeled and chopped
  •  
  • 3 cups frozen mixed vegetables
  •  
  • 3 cloves garlic, minced
  •  
  • 4 cups low sodium beef stock
  •  
  • 15 oz diced tomatoes, with juice
  •  
  • 14.5oz V8 juice
  •  
  • 1 tsp Italian Seasoning
  •  
  • 2 tsp Worcestershire sauce
  •  
  • 1 bay leaf
  •  
  • Salt and pepper to taste
  •  
  • 1 box Jiffy mix cornbread
  •  
  • 1 egg
  •  
  • ¼ cup milk
Steps
  1. In a large skillet, brown meat and onion until cooked through.
  2. Add to crockpot.
  3. Add remaining ingredients and stir to combine.
  4. Cook on low for 6hrs.
  5. Serve immediately
  6. Make cornbread before soup is finished cooking.
Notes
  • To make freezer meal, cook hamburger meat and onion, let cool, place in Ziploc bag, then add rest of ingredients to a separate Ziploc bag and freeze. Take out and thaw over night before putting in crockpot.
