Chicken Adobo with Coconut Milk {Filipino Style}
Ingredients
  • 1 cup reduced-sodium soy sauce or Tamari
  • ½ cup white wine vinegar
  • 1 heaping tablespoon of roughly chopped garlic (about 6 cloves)
  • 1 tablespoon dried thyme
  • 1 teaspoon ground black pepper
  • 1 cup full-fat coconut milk
  • 1 cup coconut cream
  • 1 cup water
  • 4 pounds bone-in, skin-on chicken pieces (any kind or combination)
  • 1 to 2 tablespoons brown sugar, to taste
  • 1 tablespoon cornstarch
  • For serving: toasted shredded coconut, chopped fresh cilantro, and thinly sliced scallions
