Creole Seafood Gumbo

Ingredients
  • 1 C plus 1 TBS Veggie Oil
  • 1 Bay Leaf
  • 1 Medium Onion, diced
  • 3 Quarts Crab Stock (12-cups)
  • 1 Celery Stock, diced
  • 1 LB Medium Shrimp, shelled & deveined
  • 1 - 8 oz Crushed Tomatoes
  • 1.5 Dozen Raw Oysters, shucked
  • ½ LB Jumbo Lump Crab Meat
  • ½ TBS Kosher Salt
  • 2 C All-Purpose Flour
  • ½ TBS Cayenne Pepper
  • 2 C Cooked Rice
  • ½ TBS White Pepper
Steps
  1. Heat 1 to 2 TBS oil in a stockpot, then add onion and celery; saute veggies over medium heat for 5-mins, or until tender and onions begin to brown.
