Teriyaki chicken bowl

Ingredients
  • 2 chicken breasts or thighs, cut into 4cm pieces
  • 1 to 2 TBS olive oil
  • 2 cups of fresh or sautéed greens: kale, baby spinach, broccolini etc
  • 1 cup cooked brown rice, quinoa or cauliflower rice
  • ½ avocado
  • Sesame seeds to serve

  • subheading: Marinade:
  • ¼ tamari
  • 2 tsp sesame oil
  • 2 tsp honey
  • 1 tsp fresh grated ginger
  • 1 TBS dijon
Steps
  1. 1. Make marinade and chicken. Marinate for 30mins- overnight.
  2. 2. Heat oil, add chicken and remaining marinade and cook for 5 mins or until fully cooked.
  3. 3. In the meantime, saute greens with oil and S&P or spices of choice.
  4. 4. To serve, divide rice, greens, chicken. Top with avocado and sesame seeds.
