Ingredients
- 2 chicken breasts or thighs, cut into 4cm pieces
- 1 to 2 TBS olive oil
- 2 cups of fresh or sautéed greens: kale, baby spinach, broccolini etc
- 1 cup cooked brown rice, quinoa or cauliflower rice
- ½ avocado
- Sesame seeds to serve
- subheading: Marinade:
- ¼ tamari
- 2 tsp sesame oil
- 2 tsp honey
- 1 tsp fresh grated ginger
- 1 TBS dijon
Steps
- 1. Make marinade and chicken. Marinate for 30mins- overnight.
- 2. Heat oil, add chicken and remaining marinade and cook for 5 mins or until fully cooked.
- 3. In the meantime, saute greens with oil and S&P or spices of choice.
- 4. To serve, divide rice, greens, chicken. Top with avocado and sesame seeds.
