Chicken Thighs in a Mustard & Tarragon Cream Sauce Instant Pot
Ingredients
  • 2 onions, sliced
  • 4 chicken thighs, bone in skin on
  • Butter and oil for frying
  • 4 mushrooms, sliced finely
  • 1 large long red pepper, sliced (romanesco?)
  • 4 cloves of garlic chopped fine
  • About 250 ml white wine (I usually use chicken stock but had none thawed).
  • Dessert spoon of fresh chopped tarragon
  • 3 teaspoons Dijon mustard (I like a lot more - partner doesn't)
  • Salt
  • Pepper
  • Corn flour to thicken
  • A good big tablespoon of double cream
