Christmas or Anytime Ice Cream Cake Without a Machine

I have always loved cooking, and now that I am no longer working I have time to find and experiment with new recipes. The addition of a Thermomix to my kitchen has also helped in this process, as well as making life much easier!

subheading: The base of this frozen cake is baked briefly. You could make a chilled one by adding more butter. Use a 24 cm (10in) loose base cake tin sides & base lined with baking paper stuck down with spray. My tin is quite deep up to 6 inches (15 cm). You can use a bigger tin to 26 cm:

Oven 170

1 cup Self raising flour (or gluten free flour)

4 Tablespoons cocoa ( dark Dutch cocoa)

⅓ cup of caster sugar

150 gm melted butter ( 5.4oz)

100 gm biscuits ( Marie, granita, or any sweet plain biscuit will do(3.5oz)-or rice cookies

subheading: Ice Cream:

1 tin of condensed milk (300 ml - 10 fl oz)

600 ml (thickened or pure) cream ( 20oz)

½ vanilla bean

subheading: Glaze:

150 ml cream (5oz)

100 gm dark chocolate (70% is perfect)(3.5oz)
