Khachapuri (Georgia Egg Boats)
These buns come from the country of Georgia, in western Asia. The idea is that you tear off a piece of the crust and dip it in the gooey cheese and egg filling. It makes a delicious brunch or after-school snack.

Ingredients
  • subheading: For the dough:
  • 3 ½ cups all-purpose flour
  • 1 teaspoon dry active yeast
  • 1 ½ tablespoons sugar
  • 1 teaspoon salt
  • ¾ cup water
  • ¾ cup milk
  • 1 tablespoon olive oil
  •  
  • subheading: For the filling:
  • 1 ½ cups farmer’s cheese (or ricotta)
  • 1 ½ cups shredded mozzarella
  • 1 ½ cups feta cheese
  • 4 eggs Other ingredients
  • 1 egg
  • 1 tablespoon water
  • ¼ cup butter, sliced
Steps
  1. subheading: Prepare the dough:
  2. In a stand mixer, combine the flour, yeast, sugar, and salt.
  3. In a saucepan, heat the water and milk to 115°F.
  4. Pour the warm liquid into the stand mixer.
  5. Using the dough hook, mix until the dough comes together.
  6. Add the oil and mix to incorporate.
  7. Transfer the dough to an oiled bowl and let it sit, covered, in a warm place for an hour, until it doubles in size.
  8. After an hour, punch down the dough. Let it rise another 30 minutes.
  9. In a mixing bowl, combine the farmer’s cheese, mozzarella, and feta cheeses.
  10. Heat the oven to 450°F and prepare a baking sheet with greased parchment paper.
  11. Divide the dough into 4 equal pieces and form them into balls.
  12. Roll out a dough ball into a circle about 9 inches across.
  13. Roll the sides inward to form a boat shape and crimp the ends to secure it.
  14. Repeat with the other dough balls. Divide the cheese mixture into the middle of the boat shapes.
  15. Mix the egg and water to make an egg wash and brush the bread with it.
  16. Bake for 15 minutes, or until golden.
  17. Remove the tray from the oven and form a depression in the cheese.
  18. Crack an egg into the indent.
  19. Add some little pieces of butter on the cheese.
  20. Bake another 5 minutes or so, depending on how cooked you like your eggs.
  21. Remember they will continue to cook out of the oven in the hot cheese.
  22. Serve immediately.
