Soft Whole Wheat Sourdough Rolls
Ingredients
  • 200g ripe sourdough starter (100% hydration)
  • 250g whole milk, warm
  • 113g (½ cup) salted butter, softened, plus extra for greasing pan and brushing rolls after baking
  • 100g unsulfured molasses (not blackstrap molasses) or honey
  • 3 large eggs (165g), lightly beaten
  • 10g apple cider vinegar
  • 12g kosher salt
  • 22g vital wheat gluten (I use Bob's Red Mill brand)
  • 500g whole wheat flour (I used Bob's Red Mill 100% Stone Ground Whole Wheat Flour--see notes)
