- 200g ripe sourdough starter (100% hydration)
- 250g whole milk, warm
- 113g (½ cup) salted butter, softened, plus extra for greasing pan and brushing rolls after baking
- 100g unsulfured molasses (not blackstrap molasses) or honey
- 3 large eggs (165g), lightly beaten
- 10g apple cider vinegar
- 12g kosher salt
- 22g vital wheat gluten (I use Bob's Red Mill brand)
- 500g whole wheat flour (I used Bob's Red Mill 100% Stone Ground Whole Wheat Flour--see notes)
