Lemony Chickpea Soup
Ingredients
  • 2 tbsp extra-virgin olive oil
  • 2 stalks celery, sliced
  • 1 yellow onion, chopped
  • 6 cloves garlic, finely chopped
  • 1 tsp each ground cumin and coriander
  • ¼ tsp ground turmeric
  • ⅛ tsp ground cayenne pepper, or to taste
  • 6 cups cooked chickpeas (or 4 15-oz BPA-free cans, drained and rinsed)
  • 6 cups low-sodium vegetable or chicken broth
  • 1 tsp sea salt
  • Ground black pepper, to taste
  • 2 lemons, cut into thirds
  • 1 ½ cups mixed fresh herbs, roughly chopped, optional (NOTE: Try a combo of parsley, cilantro, dill and mint.)
