Italian Stuffed Calamari
Ingredients
  • note: PLEASE NOTE: We indicate the weight and not the number of squids. The size of the squid can vary a lot. The squid used in many recipes vary from about 4/5 cm (about 2 inch) to over 30 cm (about 12 inch.). We used squid of about 15 cm (about 6 inch).
  •  
  • 600 g (1,3 lb) of Calamari
  • 120 ml ( ½ cup) of dry white wine
  • 2 cloves of garlic
  • 30 g (2 tablespoons) of chopped parsley
  • 100 g (3,5 oz = ½ cup) of bread (about 4 slices of sandwich bread)
  • 1 whole egg
  • 50 g (1,8 oz = ½ cup) of grated Parmigiano cheese
  • 5 large tomatoes, like vine tomatoes, or 15 small tomatoes, like cherry or grape tomatoes.
  • 6/8 tablespoons of Extra virgin olive oil.
  • fine salt to taste
