Servings: 24 fritters
Ingredients
  • 2 c. milk
  • 1 egg
  • flour
  • 2 tsp. baking powder
  • ¾ tsp. salt
  • fat
  • 2 oz. American cheese (cubed)
  • 2 oz. Swiss cheese (cubed)
  • 2 tbsp. butter (softened)
  • 1½ c. fresh broccoli (cut into 1-in. pieces)
Steps
  1. Add 1-c. milk, egg, 2-c. flour, baking powder, salt, & broccoli in blender container.
  2. Blend till broccoli is finely chopped. (If necessary, periodically stop blender & scrape sides with spatula.)
  3. Heat fat to 375° F.
  4. Drop broccoli batter by tablespoons, a few at a time, into hot fat & fry till golden brown (app. 3 to 4 mins.).
  5. Drain on paper towels & repeat with remaining batter.
  6. Clean blender container & add remaining milk, both cheeses, 2-tbsp. flour, & butter.
  7. Blend till well mixed.
  8. Pour sauce into saucepan & cook over low heat, stirring constantly, till sauce is thickened & bubbly.\
  9. Serve sauce over fritters.
