Cheesy Broccoli Fritters

Ingredients
- 2 c. milk
- 1 egg
- flour
- 2 tsp. baking powder
- ¾ tsp. salt
- fat
- 2 oz. American cheese (cubed)
- 2 oz. Swiss cheese (cubed)
- 2 tbsp. butter (softened)
- 1½ c. fresh broccoli (cut into 1-in. pieces)
Steps
- Add 1-c. milk, egg, 2-c. flour, baking powder, salt, & broccoli in blender container.
- Blend till broccoli is finely chopped. (If necessary, periodically stop blender & scrape sides with spatula.)
- Heat fat to 375° F.
- Drop broccoli batter by tablespoons, a few at a time, into hot fat & fry till golden brown (app. 3 to 4 mins.).
- Drain on paper towels & repeat with remaining batter.
- Clean blender container & add remaining milk, both cheeses, 2-tbsp. flour, & butter.
- Blend till well mixed.
- Pour sauce into saucepan & cook over low heat, stirring constantly, till sauce is thickened & bubbly.\
- Serve sauce over fritters.
