Episode 27 Falafel Pita Party
Ingredients
  • subheading: Falafel:
  • 1 cup - dry chickpeas, soaked for 8 hours (cooking optional)
  • ~50g - mild green chili
  • ¼ (~70g) - red onion
  • 5 cloves - garlic
  • ½ - lemon, juice (~2T)
  • 1 handful (~20g) - cilantro leaves (or parsley!)
  • 1 teaspoon - ground cumin
  • ½ t - turmeric
  • ½ t - black peppercorns (or ~¼t ground pepper)
  • ½ t - chili powder (optional)
  • ¼ cup - chickpea flour (plus 2 to 4 more tablespoons)
  • subheading: Tzatziki:
  • ½ cup - plain nut or bean milk
  • ½ cup - cashews
  • 1 can - white beans, rinsed and drained
  • ½ - cucumber (I prefer English cucumber)
  • 2 Tablespoons - fresh dill
  • ½ - lemon, juice and zest too if you want (~2T juice)
  • 1 to 2 cloves - garlic
  • subheading: Pita:
  • ½ cup - warm water
  • 1 teaspoon - active yeast
  • ¼ t - sugar
  • 2 cups - whole wheat flour
  • ~¾ cup - water
  • subheading: Fixings!:
  • Pita or a bed of greens
  • Sliced red onion
  • Chopped cucumber
  • Quartered cherry tomatoes
  • Falafel
  • Tzatziki
  • Avocado
  • Chopped parsley and/or cilantro to make it even prettier. Party on.
