Pumpkin Empanadas
Ingredients
  • 15 to 18 medium or 25 to 30 small sweet empanada discs - recipe here

  • 1 small pumpkin, about 2 lbs - organic if possible, cut in half, seeds and membranes removed
  • 1 lb panela or piloncillo, broken into chunks
  • 5 cinnamon sticks
  • 5 cloves
  • 3 all spice peppers
  • 3 cups water

  • 1 egg, whisked
  • ~2 to 3 tablespoons of sugar to sprinkle on top
