Bibimbap Bake

Ingredients
  • 2 cups broccoli
  • 2 Tbsp vegetable oil
  • 1 large onion, chopped
  • 3 Tbsp ginger
  • 6 cloves garlic
  • 2 lb ground beef
  • 14.5 oz beef broth
  • ¼ Soy sauce
  • 1 tsp sesame oil
  • 3 cups cooked rice
  • 7oz extra firm tofu cubes
  • 8 eggs
  • 5 green onions
  • Kimchi
  • Other toppings
Steps
  1. Preheat oven to 450. Steam broccoli 2 minutes and rinse with cold water.
  2. Sautee onion, ginger, and garlic and cook about 5 min. Add beef and cook until brown. Add broth, soy sauce, and sesame oil. Stir in rice and fold in tofu.
  3. Transfer to 13x9 pan and top with broccoli. Make 8 small indents and place eggs. Sprinkle with salt and pepper, cover with foil, and bake 20 minutes. Remove from oven, vent foil, and let stand 20 minutes.
  4. Top with green onions and kimchi
