Ham 'N Egg Cupcakes

Ingredients
  • 6 slices Deli ham
  • 6 eggs
  • 1 Tbsp heavy cream
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 1 Tbsp green onion(s) minced
  • ½ tsp marjoram optional
  • ⅓ cup cheddar cheese shredded
Steps
  1. Spray a 6 cup muffin tin with nonstick coconut oil cooking spray.
  2. Carefully line each muffin cup with 1 slice deli ham.
  3. In a medium bowl beat eggs, cream, salt and pepper until frothy.
  4. Gently stir in green onion, marjoram and cheese until well combined.
  5. Spoon about ½ cup egg mixture into each muffin tin and bake at 375 degrees for 20 to 25 minutes or until eggs are slightly puffed and set.
  6. Run knife around sides to loosen and remove to serve.
