Creamy Forest Pasta with Mushrooms
Ingredients
  • Fine salt
  • 1 pound fresh tagliatelle, or fresh or dried linguine or fettuccine
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • ¾ pound mixed wild mushrooms, sliced
  • 2 cloves garlic, thinly sliced
  • 1 tablespoon chopped fresh rosemary, plus more for serving
  • ⅓ cup dry white wine, such as sauvignon blanc
  • 8 ounces crème fraîche (see Substitutions)
  • Freshly ground black pepper
  • ¼ cups roasted or unroasted hazelnuts, coarsely chopped (about 2 ½ ounces), for serving
