Q&E Chicken Tortilla Soup
This quick and easy soup uses dehydrated seasonings and pre-cooked canned ingredients that can be heated on the stove or in the microwave.  The base of this is a can of broth, V-8, canned meat, beans, tomatoes and a green veg. Have seconds and dinner, then put the rest in the refrigerator for lunch!

Ingredients
  • 1 tab dried chopped onion
  • 1 tsp dried jalapeno pepper
  • 1 tab minced garlic or 1 tsp dried garlic
  • 1 or 2 cans chicken broth
  • 2 14.5-ounce cans diced tomatoes and juice (fire roasted or Rotels is best)
  • 1 small can of V-8 juice (optional)
  • 1 or 2 cans chicken breast meat or leftover chicken, diced or shredded
  • 1 14 oz canned corn (fire-roasted is great)
  • 1 or 2 cans black beans, northern white beans or pinto beans
  • 1 can of kale greens, turnip greens or spinach
  • 1 tablespoon lime juice
  • 1 tablespoons olive oil
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper
  • ⅓ cup fresh cilantro leaves, finely minced, or 1 tsp dehydrated cilantro leaves
  • Shredded cheddar or Mexican cheese, optional for serving
  • Sour cream, optional for serving
  • Tortilla Chips, optional for serving
Steps
  1. Add canned ingredients to pot and start heating.
  2. In a small bowl or cup, mix lime juice, olive oil and spices together so that they don't simply clump when added to the soup.
  3. Add mixed spices to heating soup, stir, and continue heating.
  4. Add minced cilantro before serving, or as a garnish
  5. Serve when hot.
  6. Top with shredded cheese, tortilla chips, sour cream if desired.
Notes
  • Decrease the spices for a milder version.  You can even make this dish with basically only the canned ingredients if you don't have the dried spices on hand.  The broth, V-8, canned meat, beans and veggies still make a really delicious, crisp soup with just a bit of salt and pepper.  Go heavy on the beans and omit the meat if you don't have any meat readily available. Pictured is the version my dad did from his pantry with just canned broth, V-8, tomatoes, corn, kale, and pinto beans, served with cheese and tortilla chips.  He also used diced leftover roast instead of chicken.  He makes various soups using just cans and leftover meat using a base of a can each of broth, V-8, beans, tomatoes and a green veg.
