Zucchini & Pumpkin Seed Muffins
Ingredients
  • 1 cup wholemeal flour (or buckwheat if needed)
  • 2 tsp baking powder
  • 1 tsp salt
  • 11⁄2 medium (300g) zucchini, grated
  • 6 large eggs, lightly beaten
  • 4 spring onions, thinly sliced
  • 1⁄2 bunch mint, leaves picked & chopped
  • 200g ricotta cheese, crumbled
  • 120g tasty (cheddar) cheese, grated
  • 1⁄2 cup pumpkin seeds
