Heidi Sze's Quick and Easy Tuna Pasta with Zucchini and Basil
Ingredients
  • 3 leeks, white and light green portion thinly sliced into 1.5cm rounds
  • 2 tablespoons extra virgin olive oil
  • 30g unsalted butter
  • Fine sea salt
  • 3 cups grated zucchini, firmly packed, see tips above
  • 250g-300g tuna canned in oil (drained weight)
  • 3 to 4 tablespoons fresh lemon juice
  • 1 big bunch of fresh basil
  • 400g pasta, see tips above
