Chickpeas, North Indian Style
  • 1 pound dried chickpeas, rinsed and picked over
  • Salt
  • 2 pounds mixed vegetables, like greens, carrots, parsnips, potatoes, winter squash, trimmed and cut into large chunks
  • 3 tablespoons peanut oil
  • 2 chopped onions
  • 2 teaspoons ground cinnamon
  • 1 1/2 teaspoons ground ginger
  • 1 1/2 teaspoon ground cardamom
  • 1 teaspoon ground coriander
  • 1 teaspoon mustard seeds
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon cayenne (or to taste)
  • Pinch fenugreek
  • Pepper
