Easy Fried Shrimp Cabbage

This fried cabbage is delicious, low-carb and diabetic friendly! Cooks in less than 20 minutes!

Ingredients
- 1-lb (16 to 20 count) defrosted shrimp, peeled and deveined
- 5 to 6 thick bacon strips, cut into small pieces
- ⅓ cup onion, finely chopped (about ½ of a small onion)
- ⅓ cup sweet bell pepper, chopped
- ½ head green cabbage shredded or roughly chopped
- 1 tablespoon brown sugar (Optional)
- ¼ tsp smoked paprika
- Salt and Pepper to taste
Steps
- Cook bacon in a non-stick pan over medium heat until crisp, about 4 to 5 minutes. Use a slotted spatula to remove the bacon and place it on plate. Blot dry with a paper towel. Do not discard the bacon grease and drippings!
- In the same pan you cooked your bacon, add the onion and bell pepper. Sauté until fragrant, about 1 minute.
- Add cabbage, salt, pepper, paprika, brown sugar and mix everything together. Cook, uncovered, for about 5 minutes or until cabbage is tender.
- Add in your shrimp and cook for 3 more minutes longer.
- Add bacon back into the pan and mix it together with the cabbage and serve warm. Enjoy! :)
Notes
- You can use sausage, ham or even cut up pieces of hotdog in place of bacon or omit it altogether!
