Carbquik Cinnamon Coffee Cake
A great low carb option for coffee cake. Note: Carbquik is not entirely gluten free.

Ingredients
  • subheading: Cake:
  • 1 c half n half or almond milk or a combo of the two
  • 2 eggs
  • 1 tsp vanilla
  • ¼ c vegetable oil (I used corn oil, which is not strict keto but works for me)
  • 3 T Lakanto monkfruit sweetener
  • 2 c (plus or minus) Carbquik
  • ½ c keto blueberry granola
  •  
  • subheading: Topping:
  • ¼ c butter, melted
  • 1 c Carbquik
  • 2 T Monkfruit blend
  • cinnamon to taste (I use quite a bit)
Steps
  1. Preheat oven to 350.
  2. Spray 10 inch round or square pan (I prefer round for this one)
  3. Mix all wet ingredients of cake together and add the sweetener.
  4. Add Carbquik and stir well. Add granola and incorporate it. If the batter is too loose, add Carbquik by ¼ c until it is cake batter like consistency.
  5. Pour into prepared pan.
  6. Mix topping ingredients until it resembles a crumble.
  7. Press the topping onto the batter.
  8. Bake 35 minutes or until topping is golden.
  9. Slice and enjoy!

  • Warning: when I try something new, I rarely measure anything. I go by look and feel.
